This designation ensures the paprika’s origin and quality, with products made from native pepper varieties like Jaranda, Jariza, and Bola, which are then ground using stone mills to produce a finely textured, smoky paprika available in sweet, hot, and bittersweet varieties. Only products meeting the strict regulations for origin, quality and traditional production methods can display this designation.
About the Producer
La Dalia is a Spanish company, founded in 1913, that produces the region’s famous Pimentón de la Vera, a high-quality, oak-smoked paprika with a Protected Designation of Origin (DOP). Using traditional methods, they smoke hand-harvested peppers over oak wood for 15 days and then grind them with stone mills to create a range of sweet, bittersweet, or spicy paprikas known for their intense smoky flavour, rich colour, and versatility in Spanish and other cuisines.
