This Duck Mousse with Armagnac from Jean Larnaudie in the south-west of France is simply delicious. It is smooth, unctuous with the distinctive flavour of Armangnac. We love it spread over fresh crusty bread, or on toast, lavosh or a cracker. For a nice touch, top off with a crispy French cornichon.
