Olasagasti Anchovies a la Basque (also known as a la Donostiarra) are premium Cantabrian anchovies lightly fried and preserved in olive oil, wine vinegar, garlic, and cayenne pepper. Unlike cured, salt-forward anchovies, these are plump, meaty, and have a rich, savoury flavour profile with a gentle kick. Delicious!
About the Producer
Olasagasti has deep roots in both the Cantabrian and Mediterranean Seas. Their story starts at the end of the 19th century when nonno Salvatore Orlando first set foot on the shores of Getaria, in Gipuzkoa. He was sent from his native Sicily by his father. He was one of the Italian pioneers who introduced the long-standing salting techniques on the Cantabrian coast, where it was then unknown. Salvatore married a Basque woman, Simona Olasagasti, and their marriage produced six children and various companies. The products of these companies were then distributed all over Italy.
From this interesting fusion of Italian cuisine with the Cantabrian Sea (or maybe the other way round) came the perfect combination of magnificent fresh fish and centuries-old know-how. After more than 100 years, they are still committed to producing superior products using traditional artisan techniques and only the best seafood.
