This Balsamic style vinegar from Spain has been aged in oak for over 25 years and has a soft, round sweetness that buffers the sharpness of the vinegar. It is a rare and exceptional artisan product.
Until 2010 this vinegar was kept solely for use by the Spinola family but now the house has allowed select companies to purchase individual barrels from the solera. We’ve managed to secure an allocation of this exceptional artisan vinegar which is bottled ‘En Rama’ or without fining or filtering. Each bottle is hand labeled and has a unique bottle number.

Ximenez-Spinola is a small, independent, family run company that has been based in Jerez since the 19th century. The family produce only Pedro Ximenez and are meticulous with barrel checking and selection. When casks of Pedro begin to show an increase in acidity levels they are removed from the solera system. As a result of this meticulous selection process continuing over decades a whole solera was able to be built from barrels showing higher levels of ethyl acetate which would eventually lead to a solera dedicated to the production of Pedro Ximenez vinegar.
