Piquillo peppers are one of the foundation vegetables of Spanish cuisine being introduced to Spain from South America in the 1500s. Both green and red peppers made their way into rice dishes such as paella, as well as salads and stews.

The peppers are from Peru and are harvested over a period of weeks to ensure they’re taken at perfect ripeness, meticulously sorted then grilled which ensures a gentle smokiness against the sweetness of the pepper.

Their natural sweetness pairs beautifully with seafood. Their smokey flavour also makes them a natural companion to chargrilled meat. Stuff them with tuna, egg and mayo for a southern Spanish style snack or cut into strips and lay across a Russian salad. We always use piquillo pepper strips in our paella, and they’re fantastic on a home-made pizza. They also go brilliantly with roast lamb and grilled fish.
