Product Description
This superb Capriete Reserve Sherry Vinegar is produced in the Jerez region of Andalucia in Spain. This area is famed for its sherry, the unique climate contributing to the distinctive flavour of the Palomino grapes that are used in the production of Capirete sherry vinegar. This vinegar is aged for 20 years in American oak barrels via the traditional criaderas and solera system. It has earned the coveted Protected Designation of Origin (PDO) under Vinagre de Jerez. It has a deep mahogany colour with amber highlights. Aromas of vanilla, dried fruits, and wine-soaked wood with an 8% acidity level.
Use it in small quantities to perfectly finish off the pan juices of a long slow cooked dish or marinating lamb for grilling. It’s also fabulous for enhancing a salad dressing.
About the Producer
The Jose Paez Lobato family have been producing the finest sherry vinegar from their ‘Bodega’ (cellar) in the Jerez region of Andalucia in Spain since 1933, when Francisco Páez Sánchez started local wine activities. Francisco’s son, Antonio Páez Lobato, grew up working in the family despacho de vinos (wine shop) named “Los Palitos“. He went on to revolutionize local gastronomy by making Sherry Vinegar a major commercial product. The family then established extensive operations utilizing old American oak casks previously used for wine, giving their vinegars unique, complex profiles. Their vinegars achieved renown and became core members registered under the Protected Designation of Origin (Denominación de Origen) for Vinagre de Jerez, utilizing Palomino and Pedro Ximénez grapes.
