This delicious and authentic Cassoulet with confit duck from Maison Godard in the South-west of France will delight lovers of this classic French dish. Made with gorgeous creamy white kidney beans and confit duck pieces, as well as Quercy pork sausage and the delicious traditional gravy. With some nice crusty bread on the side, and a glass of red, this meal is the classic French winter warmer!
The Cassoulet was born in the Middle Ages during a siege of the town of Castelnaudary. Faced with a lack of food, the besieged inhabitants gathered and cooked the food they had left, giving birth to the famous Cassoulet Castelnaudary, a dish that remains a firm French favourite to this day.

Preparation
Pour the cassoulet into a traditional ovenproof dish and spread it in a medium thick layer. Place the pieces of meat above the beans. Preheat the oven to 180C and let the cassoulet heat for 15 to 20 minutes. Finish under the grill for 5 minutes. Serve it piping hot.
ABOUT THE PRODUCER
Maison Godard was founded in 1978 by Alain and Michèle Godard in Gourdon, a medieval village inside the Quercy-Périgord region of France. Using only the best produce from the region they became renowned for the supreme quality of their foie gras, specialities with foie gras, confits, pâtés and ready made-meals. Later their children Pascal and Annabel joined the business to continue the tradition of quality and authenticity that the family is famous for.
