The coastline around Trapani in western Sicily presents ideal conditions for salt production with a shallow swampy landscape, internal winds and warm Mediterranean climate. The volcanic rock surrounding the area gives the salt a distinctive sweetness.
Italian producer, Borrometi, selects the best sea salt derived from naturally occurring basins around the coastline, with harvesting commencing in March and continuing throughout the summer.

Salt farming in Sicily is an ancient tradition. Giovanni Borrometi began farming the sea salt of the west coast of Sicily near Trapani in the first decade of the 1900’s, transporting it by horse and cart across the island to Ragusa on the western coast. The salt is processed into fine crystal salt or coarse salt before it is purified for packaging and is now sold all around the world.
