Romesco is a distinctive and delicious sauce from Spain’s Catalan region that is usually served with grilled fish or as a dip for vegetables. It is usually made with fresh and dried red capsicum, roasted almonds and hazelnuts, a good amount of garlic, and lots of sweet paprika. This romesco sauce has been created by acclaimed chef and restaurateur, Frank Camorra of MoVida restaurant fame, and produced in Spain using premium Spanish produce from the Navarra region. It is a dark, smoky sauce flavoured by the intense Nora pepper, which is the pepper traditionally used for this sauce in Spain. It is simply perfect served with mild mannered vegetables and fish. (Some Spaniards say that a grilled vegetable feast is just an excuse for eating romesco!) This sauce is also brilliant spread over a piece of toast that’s been brushed with olive oil and rubbed with yet more garlic. But the possibilities are endless!
