This is a great way to enjoy the sublime pleasure of real truffle. French producer, Plantin, have taken thin slices of black summer truffle (tuber aestivum vitt) and preserved them, lightly salted, in smooth Italian olive oil. Mildly flavored but with that unmistakable truffle aroma, this Carpaccio is perfect to use as a garnish for pasta, risotto or polenta, and braised meat dishes. Or create a truffle appetizer by tossing over a slice of hard Italian cheese on some crusty toast.
