We love these Piquillo Peppers by MoVida! Piquillo peppers are one of the foundation vegetables of Spanish cuisine being introduced to Spain from South America in the 1500s. Both green and red peppers made their way into rice dishes such as paella, as well as salads and stews. The Spaniards soon found ways of preserving them.
These fabulous Piquillo peppers come from the autonomous region of Navarre, just to the south of San Sebastian in Spain. They fully qualify for the prestigious Denominacion de Origin de Lodosa which certifies the best Pimiento del Piquillo from this area. The peppers are hand harvested over a period of weeks to ensure they’re taken at perfect ripeness, meticulously sorted then roasted over an open wood fire which ensures a gentle smokiness against the sweetness of the pepper. The peppers are then peeled and de-seeded by hand before being jarred with only their own juices and a little salt. The results are incredibly sweet, complex and smokey.
Their natural sweetness pairs beautifully with seafood. Their smokey flavour also makes them a natural companion to chargrilled meat. Stuff them with tuna, egg and mayo for a southern Spanish style snack or cut into strips and lay across a Russian salad. We always use piquillo pepper strips in our paella, and they’re fantastic on a home-made pizza. They also go brilliantly with roast lamb and grilled fish.
