Amalia Herce and Jose Salcedo started making their artisan food products in the 1950s in San Adrian in the Navarro region of Spain. Since that time their philosophy has been to bring the field to the consumer with the least possible intervention, respecting the rhythms of nature, and utilising the best methods for preserving the quality of the outstanding produce of the region. Today a new generation is respecting the knowledge and lessons of the past whilst embracing modern quality systems to ensure that Amalia and Jose’s legacy lives on.
