These Almond Crisps biscuits or Croquants de Cordes as they are known in France are a wonderful tasty treat from renowned producer Maison Bruyere. Baked with only four carefully selected ingredients this biscuit provides a mouthful of flavors: toasted almonds, a light flavor of caramel similar to nougatine and an intense crispy texture. about the producer
In 1964 Roger Bruyère, a baker, started a cookie and cake business in a small town near Albi, France. He named the company “Sudbiscuits” and set about making croquants (French crunchy cookies), but also madeleines, fruit cakes, king cakes, “fouaces” and other sweet treats. Roger Bruyère quickly became famous within the area and the business thrived. In 1984 Christian Bruyère, Roger’s son, took over the company and he oriented the production toward sweet fine cookies only. The business was now a true biscuiterie (cookie manufacturer). Christian proceeded to seek out old regional recipes and bring them back to life. His love for true taste pushed him to look for premium quality and to only use natural ingredients. Christian retired in 2009 and his two daughters took the reins as the third generation of artisan cookie makers. They renamed the business Maison Bruyère to honour their grandfather and father’s legacy.
