Fleur De Sel de Noirmoutier is harvested on the Island of Noirmoutier located in the Bay of Biscay. It’s connected to the mainland by the Passage du Gois causeway, accessible only at low tide. It is harvested entirely by hand by workers called ‘Paludiers’ – a practice which has remained largely unchanged for centuries. Only the youngest crystals from the very top layer of the salt ponds are taken by barely skimming the surface – meaning only minute quantities are harvested. Fleur de Sel is a natural unwashed, unrefined and additive free salt from the sea containing 84 minerals and trace elements essential for well-being including magnesium, calcium and potassium. Many chefs see this as the best of all sea salts because of its white clean appearance, delicate flavour and moist texture.
