This fantastic Infusion Smoker from Davis & Waddell is so easy to use and enables you take a simple food item and take the flavour to the next level. It has so many uses – let your imagination and creativity run wild!
How about smoked cheese? Just take a standard mild hard cheese such as cheddar and create your very own gourmet smoked cheese. Smoked butter? We love it and it is so easy to do. But you can infuse anything you like: fish, cheese, meats, vegetables, garlic, salt and even cocktails! The box contains some smoking recipes to help get you started.
Using the Davis & Waddell Infusion Smoker is easy. Just lay the smoking apparatus flat, and load the open receptacle loosely with fine natural wood chips (available separately, see below). Place the smoke nozzle into a covered container, flick the switch and light it up! You can even experiment with dried herbs or even exotic tea leaves instead of wood chips.
The unit has a built-in filtered fan which will cool the smoke. Cold smoking will not dry out delicate foods. After 2-3 minutes remove the nozzle and turn off the machine, sealing the smoke in with your food to let the flavour set. Do not operate unless the mesh filter is in place.
Best of all there is no need for fancy accessories. Just use everyday household items such as a bowl, snap-lock bags, cling-wrap, a plastic container with a lid. Anything that will trap the smoke will do the job.
The Infusion Smoker is compact so it won’t take up much room in your kitchen cupboard or drawer. And it and can be used for picnics, camping and outdoor entertaining as well as in the home. It takes 4 x AA batteries (not included) and includes and a spare extendable smoking nozzle.
