These delicious clams are a small, smooth shelled clam found in shallow mudflats. These clams are foraged by hand before being purged in filtered seawater tanks, they are then steamed open before being canned in their cooking liquid. They have a lovely firm texture, sweet flavour and delicious brine. They are best served cold, seasoned with lemon and pepper to taste.

These Japonicas or Japanese clams are from Korea. Cuca have been preserving fish and seafood since 1932. They use only the best raw materials, harvest by hand, clean and pack each morsel by hand and use nothing but the raw natural materials, seafood, olive oil and brine. The results are products that retain their natural shape and texture through the tinning process. You can really taste the difference.
